Figs are nature's candy. Although we were late to the jam party in making fig jams, we knew we had to see what all the excitement was behind all the requests, and we couldn't be happier that we did!
For this flavor combination, we wanted to round out the sweetness of the figs with something on the tannic side. Despite the alcohol cooking off in the process, we like to make sure to add enough port wine to ensure it leaves its flavor behind. A nice twist on a standard fig jam that features the honey and caramel notes of the green Sierra figs with a little sweet tartness from the port wine in a delectably spreadable texture.
Our delicious jam starts with Sierra figs from the Fresno Valley paired with some sweet port wine. To the mix, we add pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magically intoxicating combination.
