Persimmons are one of the top five reasons we love winter. Whether the Fuyu or Hachiyas that litter the farmers markets come December, we love to work with them and bring out their delicious and unique notes that make persimmons magical so that you feel as if you were spreading fruit right out of the jar.
Our delicious jam starts with Fuyu persimmons from local growers. To the mix, we add pure cane sugar, plenty of vanilla bean, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magically intoxicating combination.
