When our son decided that the University of Oregon was the choice for his undergraduate studies, I knew I had to make jam favors for his high school graduation party. What's more Oregon than a Marionberry, I ask you??
Our delicious marionberry jam is a seeded jam for added texture that is great for just about anything. Whether it's an alternate choice for a PB&J, as an ice cream topping or just out of the jar in spoons, we made sure to add just enough sugar to have the jam keep while letting the berry flavor shine like a rockstar.
Marionberries were a blackberry variety developed by a fellow Oregon University as a cross between a blackberry and olallieberry, which in its own right is a blackberry and raspberry blend. These wonderful berries have a distinctive blackberry flavor with a hint of raspberry along with much fewer seeds than a standard blackberry.
We start with hand selected fruit that is shipped to us individually quick frozen from an Oregon farm in Marion County in dry ice for next day delivery. Our recipe uses only fresh frozen marionberries, pure cane sugar, a little citrus pectin for help with gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magical combination.
