For this flavor combination, we wanted to round out the sweetness of the figs with something on the tannic side. Our delicious jam starts with Adriatic figs from the Fresno Valley paired with some sweet port wine. To the mix, we add pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magically intoxicating combination.
