Working with quince is a labor of love... Those that know the flavors that quince has to offer if you are willing to put in the time know that they will be handsomely rewarded with a floral apple/pear flavor that is wonderful as a jam, jelly, fruit paste or fresh desert.
Our delicious jam starts with chunky quince from the Cotati, CA area that is boiled gently to bring out the red color before processing with a little rosewater to bring out the floral note even more. The recipe uses only fresh quince, pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice and rosewater for a little zing to the flavor in this magical combination.
