Tiger Stripe Fig Jam

While I'd love to claim that the Panache Tiger Stripe Fig was named after my favorite style of Kung Fu, I'm sure it just got its name from its yellow and green striped exterior. A wonder of a fig to eat fresh with notes of citrus and raspberry, we couldn't wait to see how the jam would turn out... and this is a GOOD one! 

The recipe uses only fresh figs, pure cane sugar, a little citrus pectin for added gelling and a generous splash of freshly squeezed lemon juice for a little zing to the flavor in this magical combination that brings out the natural citrus notes even more so.
